Roasted Duck in Spicy Red Curry
(serves 3-4 persons) Lobo Red Curry Paste 1 packet Roasted duck, deboned and cut into bite sized chunks 250 g (8.8 oz) or other meat Coconut milk 1 cup (240 ml) Water 1 cup (240 ml) Pineapple, cut into bite sized chunks ½ cup Eggplant, cherry tomato, sweet basil leaves and chilli Fish sauce

• Set the skillet on low heat. Add coconut milk and let boil before adding Red Curry Paste. Stir until coconut milk breaks into oily bubbles. • Once coconut milk is clear, add chopped roasted duck. Stir, add water and bring to the boil. • Add pineapple, cherry tomato and slanted chilli. Flavour with fish sauce as desired. • Once curry boils again, turn off heat, add sweet basil leaves and serve.
• This version of Roasted Duck in Spicy Red Curry can be served with either hot steamed rice or rice noodles. • If you want to use fish sauce to add aroma, please add all other ingredients first then follow by fish sauce to optimize the flavour.
