Spicy Thai Fermented Pork Sausage (Nam)
Ingredients
(serves 8-10 persons) Lobo Nam Powder Seasoning Mix 1 packet Lean pork (chilled) ½ kg (17.5 oz) Cooked pork rind (chilled) 250 g (9 oz) Coarsely chopped garlic 3 tablespoons Chilli pepper (Bird chilli) 10-20
Preparation
Nam is a unique way of marinating meat with unmatched flavour and is probably the oldest food technology transferred from Thailand’s northern ancestors. After preparation, the food is packed into plastic containers until ready to serve.
• Wash lean pork ½ kg in cold water and then pat dry with paper towel. Start mincing the pork and then chill it in the freezer. • Clean cooked pork rind 250 g with cold water and then pat dry with paper towel. Cut it into small and long strips around 1-1 ½ inches. Chill it in the freezer. • Empty the contents of the Nam Powder Seasoning Mix together with Nam salt into the chopped pork. Knead the mixture quickly while the pork is still cold. • Add pork rind, garlic and bird chilli. Knead the mixture again, quickly. • Pack the mixture into a plastic sleeve or plastic bags. Press to purge air and wrap firmly with rubber bands. • Leave at room temperature for 24 hours then serve. This preparation can last one week when stored in the refrigerator.
