Beef or Chicken Laab or Namtok
Ingredients (serves 3-4 persons) Lobo Laab-Namtok Seasoning Mix 1 packet Beef, chicken or other meat 30 g (1 oz) Water ¼ cup (60 ml) Fish sauce Red onion, mint leaves and green shallot
(Red onion, Substitutes: Spanish onion or white onion Mint leaves, Substitutes: Basil; marjoram; or rosemary Green shallot, Substitutes: spring onions OR leeks OR shallots OR chives)
The legendary taste of Laab was taken to Bangkok by the people of E-san in the Northeast of Thailand. The blend of ethnic herbs and lime juice makes this dish truly tantalising and refreshing. It is common for Laab-Namtok to be served with steamed sticky rice. Enjoy!
• To prepare beef, chicken or meat of your choice, chop finely to make Laab or grill just to bring juice out then slice into thin pieces for Namtok. • Bring water to the boil and put meat in to cook. Remove, add the Laab-Namtok Seasoning Mix and stir. • Flavour with fish sauce and other seasonings. Add red onion, mint leaves and green shallots. Serve with hot glutinous rice and fresh vegetables of your choice.
• The secret to making Laab is to squeeze lime juice and sprinkle salt onto chopped meat before cooking. This will make the dish richer in taste and aroma. • Laab and Namtok are served with fresh vegetables like cucumber, cabbage, yard long bean, lettuce and long coriander. Wash and chill them before serving. • For health conscious individuals, tofu and mushrooms can be used instead of meat.
