Steamed Shrimp with Bean Vermicelli in Clay Pot
Ingredients
(serves 2 persons) Lobo Potted Seafood Seasoning Paste 1 packet Bean vermicelli 100 g (3.5 oz) Lard or bacon 100 g (3.5 oz) (or) vegetable oil 3 tablespoons Shrimps 300 g (10.5 oz) Chopped Chinese celery 2-3 stems
Preparation
A specialty in luxury Chinese restaurants. A scrumptious one-pot seafood dish with subtle Chinese herbs and spices. And it’s LOBO way.
• Wash shrimps thoroughly and devein. • Soak bean vermicelli in water until soft. Chop into shorter strings and mix with other ingredients. • Slice lard or bacon into 10-15 pieces, and lay them across the pot bottom. Vegetable oil may be used as a substitute for lard. • Place Chinese celery, vermicelli and shrimps into pot. • Close lid and set pot on low heat for 15-20 minutes. Serve hot.
Tips
• Do not steam shrimps too long, or they will become overcooked. • Serve it with Lobo Thai seafood dipping sauce to enhance the taste (optional). • Besides shrimps, this Potted Seafood Seasoning Paste can be used with crab, mussels or scallops separately or as a mixture. • Ceramic and stainless steel pots can be used if a clay pot is not available.
